These balsamic steak and mushroom skewers are a delicious and flavorful dish. The sweet balsamic vinegar adds a punch of flavor to the tender steak and earthy mushrooms. Ingredients:
- 1 cup balsamic vinegar
- ¼ cup finely chopped fresh flat-leaf parsley, plus more for serving
- 2 tablespoons extra-virgin olive oil
- 6 cloves garlic, smashed
- 1 pound trimmed top sirloin steak (3/4-inch thick), cubed (1 1/2-inch)
- 2 (8 ounce) packages cremini mushrooms
- ½ teaspoon salt
- ½ teaspoon ground pepper
Instructions:
- In a medium bowl, whisk together the balsamic vinegar, parsley, olive oil, and garlic until well combined. Divide the mixture into two bowls.
- Add the steak to one bowl of marinade and the mushrooms to the other bowl. Toss each ingredient in its respective marinade until coated. Let them stand at room temperature for 15 minutes, uncovered.
- Remove the steak and mushrooms from the marinades, discarding the marinades. Thread the steak onto two 12-inch metal skewers and the mushrooms onto another two 12-inch metal skewers.
- Preheat the grill to high heat (450°F to 500°F) and oil the grill grate to prevent sticking.
- Grill the skewers, uncovered, turning once halfway through, until the steak reaches an internal temperature of 125°F and the mushrooms are slightly caramelized and charred. This should take about 8-10 minutes for the steak and approximately 10 minutes for the mushrooms.
- Sprinkle the skewers with salt and pepper before removing them from the grill.
- Transfer the skewers to a large plate and garnish with additional parsley, if desired. Serve immediately.
Note: If you don’t have a grill, you can also cook the skewers on a stovetop grill pan or under the broiler in your oven.
